Paprika, to taste
1 onion, finely chopped
1 clove of garlic, minced
1 pepper (red or green), chopped
100g ketchup (about ½ cup)
Italian herbs, to taste
100g cheese (like mozzarella or cheddar), grated
100g mushrooms, sliced
4-6 cherry tomatoes, halved
Olives, to taste
For the Garlic Dill Sauce:
2 tbsp yogurt
1 tbsp mayonnaise
Dill, chopped
1 clove of garlic, minced
Steps to Make It
Step 1: Prepare the Zucchini
Preheat your oven to 180°C (356°F).
Arrange the zucchini slices on a baking tray lined with parchment paper.
Drizzle the zucchini with olive oil and season with salt, black pepper, and paprika. Toss gently to coat the slices evenly.
Step 2: Sauté the Vegetables
Heat a small amount of olive oil in a skillet over medium heat.
Add the chopped onion and minced garlic, cooking until fragrant and slightly golden.
Stir in the chopped pepper and sliced mushrooms. Sauté until the vegetables are tender and the mushrooms release their moisture.
Step 3: Assemble the Baked Zucchini
Spread a thin layer of ketchup over the seasoned zucchini slices on the tray.
Top each zucchini slice with the sautéed vegetables.
Sprinkle Italian herbs evenly across the tray.
Add halved cherry tomatoes, olives, and a generous layer of grated cheese on top.
Step 4: Bake the Zucchini
Place the tray in the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and golden, and the zucchini is tender but not mushy.
Step 5: Make the Garlic Dill Sauce
In a small bowl, mix the yogurt, mayonnaise, chopped dill, and minced garlic.
Stir until the sauce is smooth and well combined. Taste and adjust the seasoning if needed.
Step 6: Serve
Remove the baked zucchini from the oven and allow it to cool slightly.
Serve the warm zucchini with a drizzle of the garlic dill sauce or with the sauce on the side for dipping.
