Ingredients:
8 pork sausages (or your favorite sausage)
1 lb (450g) potatoes (Yukon Gold or Russet)
4 tablespoons butter
1/4 cup heavy cream or milk
Salt and pepper, to taste
1 tablespoon olive oil (for cooking sausages)
1 onion (optional, for gravy)
Instructions:
Prepare the potatoes:
Peel and chop the potatoes into chunks. Place them in a large pot of cold, salted water. Bring to a boil and cook for about 15 minutes or until the potatoes are fork-tender.
Cook the sausages:
While the potatoes cook, heat the olive oil in a large skillet over medium heat. Add the sausages and cook, turning occasionally, until they’re golden brown and cooked through (about 10-12 minutes).
Make the mash:
Once the potatoes are done, drain them and return them to the pot. Add butter and cream, then mash until smooth and creamy. Season with salt and pepper to taste.
Serve:
Place the mashed potatoes on plates and top with the cooked sausages. For extra flavor, you can make a simple onion gravy by sautéing onions in the sausage pan and adding a little flour and stock.
