Chocolate Mousse Recipe

- 6 oz (170 g) good-quality dark chocolate (60–70%), chopped
- 3 tbsp unsalted butter
- 3 large eggs, separated
- ⅓ cup granulated sugar
- 1 cup heavy whipping cream, chilled
- 1 tsp vanilla extract
