Directions
1. Make the Peanut Butter Snowball Filling
-
In a medium bowl, combine:
-
peanut butter
-
softened butter
-
vanilla extract
-
pinch of salt
-
-
Mix until smooth and creamy.
-
Add the powdered sugar and crushed graham crackers.
-
Stir until a thick, dough-like consistency forms.
-
It should be firm enough to roll into balls. If too sticky, add 1–2 more tablespoons of powdered sugar.
-
2. Shape the Snowballs
-
Line a baking sheet with parchment paper.
-
Scoop out about 1 tablespoon of dough and roll into a ball.
-
Place each ball on the parchment-lined tray.
-
Once all balls are shaped, freeze them for 20–30 minutes.
-
This step helps them keep their shape when dipped in melted chocolate.
-
3. Prepare the Chocolate Coating
-
Add chocolate chips and coconut oil to a microwave-safe bowl.
-
Microwave in 20–30 second intervals, stirring each time, until smooth and glossy.
-
Alternatively, melt using a double boiler.
-
4. Dip the Snowballs
-
Remove chilled peanut butter balls from the freezer.
-
Using a fork or dipping tool, lower each ball into the melted chocolate.
-
Let excess chocolate drip off, then place the coated ball back on the parchment.
-
Repeat for all snowballs.
-
Refrigerate for 15 minutes, or until the chocolate sets.
5. Make the Caramel Drizzle
-
Combine caramels and heavy cream in a small microwave-safe bowl.
-
Microwave in 20-second intervals, stirring between each, until completely melted.
-
Allow it to cool slightly—just enough that it thickens but still flows.
-
Using a spoon or piping bag, drizzle caramel over each chocolate snowball.
-
Sprinkle with flaky salt or coconut if desired.
6. Chill & Serve
-
Return the snowballs to the fridge for at least 10 minutes to set the caramel.
-
Serve cold or at room temperature.
Storage
-
Refrigerator: Up to 2 weeks in an airtight container.
-
Freezer: Up to 2 months. Allow 10 minutes at room temp before serving.
