For Frying:

3–4 tablespoons oil (olive oil or any neutral oil)
Instructions
1. Prepare the Vegetables

Grate the zucchini, then squeeze out extra water using your hands or a clean towel.

Grate carrots and chop remaining vegetables.

Add all veggies into a mixing bowl.
2. Make the Batter
Add to the veggies:

Eggs
-
Flour
-
Salt
-
Pepper
-
Paprika
-
Garlic powder
-
Cumin
-
Baking powder (optional)
Mix until everything is well combined.
If the mixture seems too wet, add 1–2 tbsp more flour.
3. Shape and Fry
Heat 2–3 tbsp oil in a non-stick pan.
Take a spoonful of mixture, place it on the pan, and spread it slightly to form a patty.
Fry on medium heat for 3–4 minutes per side until:

Crispy

Cooked through
Add more oil as needed.
