Directions
1. Heat a large skillet over medium heat and add the olive oil.
2. Add the spinach leaves to the skillet and sauté for 2-3 minutes until wilted. Season with salt and pepper to taste.
3. Remove the spinach from the skillet and set aside.
4. Place a tortilla in the skillet and sprinkle half of the mozzarella cheese evenly over it.
5. Layer the sautéed spinach over the cheese, then sprinkle the remaining cheese on top.
6. Place another tortilla on top and press down gently.
7. Cook for 2-3 minutes on each side, or until the tortillas are golden brown and the cheese is melted.
8. Remove from the skillet and let it cool slightly before slicing into wedges.
9. Repeat the process with the remaining tortillas and filling.
Variations & Tips
For a more robust flavor, try adding some sautéed mushrooms or caramelized onions to the filling. If you have picky eaters, you can substitute the spinach with finely chopped kale or arugula. For a spicier kick, include a sprinkle of red pepper flakes or a few slices of jalapeño. To make it even more protein-rich, add some cooked chicken or turkey slices.
