Mini Strawberry Shortcake Cheesecake Rolls

Ingredients

For the Cake Roll:

  • 4 large eggs, room temperature
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour, sifted
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¼ cup milk (whole preferred)
  • 2 tbsp unsalted butter, melted
  • Powdered sugar (for dusting towel)

For the Cheesecake Filling:

  • 1 cup heavy whipping cream (cold)
  • 8 oz cream cheese, softened
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup diced fresh strawberries (or chopped thawed frozen)

For the Strawberry Glaze & Topping:

  • ¾ cup whipped topping or frosting of choice
  • ½ cup crushed graham crackers or vanilla cookies
  • Optional: caramel drizzle, freeze-dried strawberries, mint
