Instructions
Prepare the Potatoes:
· Preheat oven to 200°C (400°F).
· In a large baking dish (approx. 23x33cm / 9×13 inch), toss cubed potatoes and sliced onion with olive oil, paprika, garlic powder, salt, and pepper.
· Spread in an even layer and bake for 20 minutes while you prepare the meatballs.
Make & Brown the Meatballs:
· In a bowl, combine ground meat, grated onion, garlic, egg, breadcrumbs, milk, oregano, salt, and pepper. Mix until just combined.
· Shape into small meatballs (about 2–3cm in diameter).
· Heat olive oil in a large skillet over medium-high heat. Brown meatballs on all sides (about 5–6 minutes total). They don’t need to be fully cooked through. Set aside.
Assemble the Casserole:
· Remove the partially baked potatoes from the oven. Reduce oven temperature to 190°C (375°F).
· Scatter the browned meatballs over the potatoes.
· In a bowl, mix crushed tomatoes, broth, and Italian herbs. Pour evenly over the meatballs and potatoes.
· Cover the dish tightly with foil and bake for 30 minutes.
Add Cheese & Final Bake:
· Remove foil, sprinkle all the cheese evenly over the top.
· Return to oven (uncovered) and bake for another 15–20 minutes, until cheese is bubbly and golden, and potatoes are fully tender.
· Let rest for 5–10 minutes before serving. Garnish with fresh parsley.
Tips for Success
· For crispier potatoes: Parboil potato cubes for 5 minutes before the initial bake, or roast them separately at a higher temp until golden before assembling.
· Make ahead: Assemble the casserole (without cheese) up to a day ahead. Refrigerate, then bake as directed, adding extra 5–10 minutes if chilled.
· Cheese variations: Try adding Parmesan to the mix, or top with Gouda or Monterey Jack.
· Add veggies: Stir in sliced bell peppers, mushrooms, or spinach with the potatoes for extra nutrition.
Serving Suggestions
· Serve with a simple green salad or steamed green beans.
· Great with crusty bread to soak up the sauce.
· Can be a standalone meal—it’s hearty and complete!
