Instructions:
- Prepare the Coffee Pudding Layer:
In a bowl, whisk the instant vanilla pudding mix with milk and coffee liqueur (or brewed espresso). Whisk for 2 minutes until it thickens. Set aside to chill.
- Make the Cream Layer:
In a separate bowl, beat the heavy cream, mascarpone cheese, powdered sugar, and vanilla extract with an electric mixer until soft peaks form. This will create a smooth, fluffy cream layer.
- Assemble the Pudding Cups:
Spoon a layer of the coffee pudding into the bottom of each cup. Add a generous layer of the mascarpone cream mixture on top of the pudding. Repeat the layers if your cups are deep.
- Chill the Cups:
Refrigerate the assembled cups for at least 2 hours to allow the flavors to meld and the layers to firm up.
- Serve and Garnish:
Just before serving, dust the tops with cocoa powder and garnish with shaved chocolate or chocolate curls if desired.
