Spread 1/2 tablespoon of honey in 3 lines on parchment.
Arrange about 6 peach slices over honey lines, drizzle 1/2 tablespoon honey.
Layer thawed sheets, roll with pin, cut into 3 pieces (6×4″).
Position pastry piece over peaches, seal edges, creating 3 pieces.
Whisk egg, brush for golden color. Bake ~10 minutes until golden.
Cool for 10 minutes, flip pastries, sprinkle powdered sugar, if desired.
