Triple Berry Mousse Cake
In a small bowl, dissolve the gelatin powder in warm water and let it bloom for about 5 minutes.
In a separate large bowl, whip the heavy cream until soft peaks form. Set aside.
In another bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
Gently heat the gelatin mixture in the microwave for about 15 seconds, then slowly incorporate it into the cream cheese mixture, stirring well.
Gradually fold in the whipped cream until the mixture is light and fluffy.
Blend the mixed berries in a blender or food processor until smooth, then strain the mixture to remove seeds. Fold the berry puree into the mousse mixture.
Pour the mousse onto the prepared crust in the springform pan. Smooth the top with a spatula, then chill in the refrigerator for at least 4 hours, or until set.
Once set, top the mousse cake with fresh berries and serve.
