Instructions
Step 1 â Soak the Chickpeas

Add dried chickpeas to a large bowl.

Cover with plenty of water.

Soak overnight (12 hours) until tripled in size.
(This step is crucial â canned chickpeas will make mushy falafel.)
Step 2 â Blend the Mixture
In a food processor, add:

Soaked (drained) chickpeas

Onion
-
Garlic
-
Parsley
-
Cilantro
-
Dill
-
Spices
Blend in pulses until mixture is grainy, not paste-like.
It should hold together when pressed.
Step 3 â Add Baking Soda & Chill

Mix in baking soda.

Chill mixture in the fridge for 30â60 minutes to firm up.
Step 4 â Shape

Form small balls or patties using hands or a falafel scoop.

If too loose, add 1â2 tablespoons flour.
