Ingredients (Serves 2)
BASE:
- 1 cup cooked quinoa (rich in fiber & protein)
- 2 cups baby spinach or kale(cruciferous greens loaded with sulforaphane)
TOPPINGS:
- ½ cup steamed broccoli florets (contains sulforaphane and indole-3-carbinol)
- ½ cup red cabbage, shredded (rich in anthocyanins and vitamin C)
- ½ avocado, sliced (healthy fats help absorb antioxidants)
- ½ cup cherry tomatoes, halved (lycopene-rich)
- ¼ cup carrots, shredded (beta-carotene source)
- 2 tbsp pumpkin seeds (zinc, antioxidants)
- ¼ cup blueberries or pomegranate seeds (potent antioxidants)
PROTEIN OPTION (OPTIONAL):
- ½ cup chickpeas, roasted or boiled (fiber, plant protein)
- OR grilled organic tofu (for a full plant-based meal)
